Honey and Wild Orange Bran Muffins

When eating at Mimi’s Cafe whether for breakfast, lunch,or dinner, I love to order one of their honey bran muffins to eat there and also one to take home to share.  I always say it’s not for me and I will share but…I have zero self control and I usually eat that one as well.  They are not like your typical bran muffins which are dry and lacking in flavor.  They are moist, sweet, with just the right amount of sticky.  If I have to be honest I would say they taste more like a dessert than a bran muffin, but the words bran muffin sound so much healthier so I feel less guilt when I eat one…or two.  This recipe is very similar but I have added a few of my own twists.  I like the deep rich flavor of molasses and the light, fresh taste of oranges so I have added them to this recipe to make a DELICIOUS bran muffin. **Wild orange oil can help with digestive and immune systems, emotional balance, and your skin.  It’s properties include anticancer, antidepressant, antiseptic, antispasmodic, digestive, and sedative.

Ingredients

Muffins

1 cup flour

1 cup wheat bran

4 tsp powdered milk

1/4 tsp baking powder

1 tsp baking Soda

1/4  tsp salt

1/3  cup brown sugar  light or dark

1/4  cup honey 2 tbsp molasses

1/4  cup coconut or vegetable oil

1 egg

1/2 cup water

4 drops wild orange essential oil

Glaze

3 tbsp sugar

3 tbsp packed brown sugar

3  tbsp  butter slightly melted

2 tbsp honey

2 tsp water

Instructions

1. Preheat oven to 350 degrees

Honey Bran Muffins 2 2. In mixing bowl add flour, bran, powder milk, baking powder, baking soda, brown sugar, and salt.  Mix ingredients to combine.

3. Make a small hole in the center of the dry mix and add honey, molasses, oil, egg, water and orange zest.  Mix on low until all the ingredients are combined. Honey Bran Muffins 3 4. Next make the glaze in a separate bowl by adding sugar, brown sugar, slightly melted butter, honey and water.  Mix with a spoon until well combined. Honey Bran Muffins 4 5. Spray the muffin pan with a vegetable spray and then smear 1 tablespoon of the glaze into each muffin hole.  If you are using a pan for larger muffins (6 muffins), divide it equally among all holes. Fill each muffin tin to 2/3 full.  If you fill them too full they will overflow during cooking.  If you are using a large muffin tin you will yield 6 muffins, if you are using the standard size you will get 12 muffins. Honey Bran Muffins 6 7. Bake for 16 minutes or until an inserted toothpick comes out clean.  Don’t overcook or they will be dry and the yummy glaze will burn and stick to the pan. 8. Let cool for 3-4 minutes then remove muffins by turning over the pan onto a cooling rack.
